Lectin-Free Semolina Porridge – the digestible alternative to the classic
A lectin-free semolina porridge is the ideal alternative to the classic recipe with wheat semolina. By using millet instead of wheat, you get a gluten-free, more easily digestible, and modern semolina porridge that fits perfectly into a conscious diet.
With sheep's milk, sheep's butter, and allulose, this semolina porridge not only becomes particularly creamy but also sugar-free and easily digestible.
Recipe: Lectin-Free Semolina Porridge with Millet
Ingredients (for 4 servings)
- 1 tbsp sheep's butter
- 500 ml sheep's milk or A2 milk
- 1 pinch of salt
- 2 tbsp allulose*
- 1 pinch of vanilla or cinnamon (optional)
- 90 g millet semolina
- 2 tbsp ORGANIC MCT oil
Preparation
- Slowly heat sheep's butter, MCT oil, and milk until the milk just begins to simmer.
- Stir in salt, allulose, and optional vanilla/cinnamon.
- Slowly sprinkle in millet semolina while stirring constantly.
- Gently simmer for 3–4 minutes until a creamy consistency is achieved.
Make your own millet semolina or use fonio
For a particularly high-quality lectin-free semolina porridge, you can make your own millet semolina:
Simply coarsely grind golden millet in a grain mill to create a semolina-like texture.
Alternatively, fonio millet is excellent. It is naturally very fine, quick to prepare, and particularly easy to digest – ideal for a lectin-free diet.

Instead of butter, you can also use beef tallow, and instead of milk, simply use water. Tastes almost even creamier ;)
